Swift Premium Pork Shopping List
Herb Crumb-Crusted Pork Loin
Prep Time: 30 minutes
Cook Time: 1 1/4 to 1 1/2 hours
Serves: 12-14
  • One 4 to 4 1/2 pound Swift Premium® Boneless Pork Half Loin
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 2 to 3 tablespoons Dijon mustard
  • 1 large garlic clove, minced (3/4 teaspoon)
  • 2 tablespoons olive oil
  • 3 1/2 cups fresh French bread crumbs
  • 2 tablespoons chopped flat-leaf parsley leaves
  • 2 tablespoons chopped fresh thyme
  • 2 teaspoons chopped fresh rosemary
Cooking Directions:
  1. Preheat oven to 350º F. Pat roast dry with paper towels. If necessary, trim outer fat to 1/16 inch. Rub roast with oil; lightly season with salt and pepper.
  2. Place roast on rack in shallow pan. Roast, uncovered, in oven for 1 hour.
  3. Meanwhile, for crumb topping, cook garlic in oil in large skillet over medium heat for 30 seconds. Add bread crumbs; toss until evenly coated. Add parsley, thyme, and rosemary. Cook and gently toss for 3 to 5 minutes or until slightly dry. Remove from heat.
  4. Remove roast from oven. If necessary, remove excess moisture from surface with paper towels. Spread mustard over top and sides. Press bread crumb mixture evenly onto mustard. Return to oven and continue roasting for 15 to 30 minutes or until instant-read thermometer inserted near center reads 145° F. (If necessary, loosely cover pork with foil to prevent overbrowning of crumbs.)
  5. Transfer roast to cutting board. Loosely cover with foil; let rest for 3 minutes. Carve slices; serve.
