Pork and Barley Soup
One pound Swift Premium® Ground Pork
3 teaspoons olive oil
1/2 cup chopped cabbage
1/2 cup chopped onion
1/2 cup chopped carrot
2 14.5-ounce cans vegetable broth
1 10 3/4-ounce can condensed tomato soup
1/2 teaspoon dried oregano leaves
1/4 teaspoon freshly ground black pepper
1/4 cup quick-cooking barley
Cook ground pork in 1 teaspoon hot oil in large skillet for 3 to 4 minutes or until pork is no longer pink, breaking pork into large crumbles. Drain and discard juices. Transfer pork to large saucepan.
Cook cabbage, onion, and carrot in remaining 2 teaspoons oil about 3 minutes or until slightly soften. Transfer to saucepan.
Add broth, condensed soup, oregano, and pepper. Very gently simmer, covered for 30 minutes. Add barley and simmer, covered, about 10 minutes more or until barley is tender.
