Pork and Green Chile Burritos

Serves: 4
Ingredients:
  • 1 pound Swift Premium® Ground Pork
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • One 4 ounce can diced green chiles
  • 1 tablespoon salsa verde
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Dash ground red pepper
  • Four 10 inch flour tortillas
  • 3/4 cup finely shredded cheddar and Monterey Jack cheese blend (3 ounces)
  • Desired toppings, such as salsa, sour cream, and/or cilantro (optional)
Cooking Directions:
  1. Preheat oven to 400º F. Brown pork with onion and salt in large skillet over medium-high heat about 6 minutes or until pork is no longer pink, breaking pork in to 3/4 nch crumbles. Drain and discard juices.
  2. Stir in green chiles, salsa, cumin, coriander, and red pepper; cook over medium heat for 1 minute.
  3. Spoon one-fourth of the mixture onto the center of each tortilla; top with cheese. Fold bottom edge over filling, then fold in sides and roll up.
  4. Wrap burritos individually in foil. (Or place, seam sides down, on baking sheet; cover with foil.) Bake in oven about 10 minutes or until heated through. If desired, serve with toppings.
