Summertime Iowa Chops

Four 14 to 16 ounce Swift Premium® Bone In Pork Loin Chops, cut 1 1/4 to 1 1/2 inch thick
1 1/2 cups Italian salad dressing
1/4 cup minced onion
1 tablespoon soy sauce
3 garlic cloves, minced (1 1/2 teaspoons)
1/2 teaspoon coarse-ground black pepper
Place pork chops in large, resealable plastic bag. For marinade, combine Italian dressing, onion, soy sauce, garlic, and pepper. Set aside 1/2 cup marinade. Pour remaining marinade over pork; close bag. Turn bag to evenly coat pork with marinade. Refrigerate for 6 hours or overnight, turning bag occasionally.
To grill, remove chops from refrigerator and continue marinating at room temperature for 15 to 20 minutes. Meanwhile, preheat gas or charcoal grill for 2-zone cooking, with one zone heated to very high heat for direct grilling and the other zone heated to medium heat (350ºF to 375ºF) for indirect grilling.
Remove chops from marinade; let excess marinade drip off into bag. Discard marinade in bag.
Grill chops, uncovered, over the direct-heat area about 2 minutes on each side or until nicely seared with grill marks. Then move chops to the indirect-heat area; brush with some of the reserved marinade. Grill, covered, for 20 to 30 minutes or until instant-read thermometer inserted near centers of chops reads 145° F.
Transfer chops to serving platter. Loosely cover with foil; let rest for 3 minutes. Brush with remaining marinade before serving.
