In-A-Flash Pork Piccata

Four 2 to 3 ounce Swift Premium® Boneless Pork Loin Chops
1 teaspoon lemon-pepper seasoning
2 to 3 teaspoons canola oil
1/3 cup dry white wine
2 tablespoons fresh lemon juice
2 teaspoons unsalted butter
2 teaspoons brined capers, rinsed
Chopped fresh parsley (optional)
Pat pork chops dry with paper towels. Sprinkle lemon-pepper seasoning on both sides of pork chops.
Cook chops, uncovered, in hot oil in large skillet over medium-high heat for 3 to 4 minutes or until lightly brown, turning chops over halfway through cooking. Transfer chops to warm platter; cover to keep warm.
Remove skillet from heat; wipe skillet with paper towels. Carefully add wine. Return skillet to heat and scrap brown bits from bottom of skillet, Cook until reduced by half. Add lemon juice and butter; heat. Stir in capers and pour sauce over cutlets. Garnish with parsley.
