Grilled Pork Tenderloin with Spicy Peach Sauce
One Swift Premium® Pork Tenderloin (1 1/4 to 1 1/2 pounds)
1 1/2 teaspoons canola oil
Salt and ground white pepper
Spicy Peach Sauce
1/2 cup canned or thawed, frozen peach slices, drained well
1/3 cup peach preserves
1/2 teaspoon ground cumin
Dash ground red pepper (optional)
1 tablespoon minced Fresno* or jalapeño chile
* Fresno chiles are hot red chile peppers similar in appearance to jalapeños, except they are wider on top and have a slightly more pungent heat and sweeter flavor.
For sauce, place peaches in mini food processor or blender. Process or blend until puréed. Add preserves, cumin, and if desired, red pepper. Process or blend until combined. Stir in chile; set aside.
Preheat gas grill to medium for direct grilling. Pat tenderloin dry with paper towels; rub with oil. Season with salt and white pepper.
Grill tenderloin, uncovered, about 20 minutes or until instant-read thermometer inserted near center reads 145°F., turning occasionally and brushing with the sauce during the last 5 minutes of grilling.
Transfer tenderloin to cutting board. Loosely cover with foil; let rest for 3 minutes. Warm remaining sauce. Carve tenderloin slices; serve with sauce.
