Sesame Pork Tenderloin

Ingredients:
  • One Swift Premium® Pork Tenderloin (1 1/4 to 1 1/2 pounds)
  • 1/4 cup seasoned rice vinegar
  • 1/4 cup fresh orange juice
  • 1 tablespoon light soy sauce
  • 1 tablespoon minced fresh ginger
  • 2 garlic cloves, minced (1 teaspoon)
  • 1/2 teaspoon Asian toasted sesame oil
  • 1/4 teaspoon salt
  • 2 tablespoons sesame seeds, toasted
Cooking Directions:
  1. Place pork in medium, resealable plastic bag. For marinade, combine vinegar, juice, soy sauce, ginger, garlic, sesame oil, and salt. Pour marinade over pork; close bag. Turn bag to evenly coat pork with marinade. Refrigerate for 4 to 6 hours, turning bag occasionally.
  2. Remove pork from refrigerator; marinate at room temperature for 15 minutes.
  3. Preheat oven to 425º F. Place sesame seeds, in a single layer, on a large sheet of waxed paper. Remove pork from marinade; drain off excess. Discard marinade. Roll sides and top of tenderloin in sesame seeds to coat evenly. Place tenderloin on rack in shallow roasting pan.
  4. Roast tenderloin, uncovered, in oven for 25 to 30 minutes or until instant-read thermometer inserted near center reads 145° F. Loosely cover with foil; let rest for 3 minutes.
  5. Transfer tenderloin to cutting board. Carve slices; arrange pork on serving platter.
