Rib Ticklin' Pork Riblets

Cook Time: 1 1/2 hours
Serves: 4-5 appetizer servings
Ingredients:
  • One 2 1/2 pounds Swift Premium® Riblets
  • 1 teaspoon garlic salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon freshly ground black pepper
  • 2 1/2 cups water
  • Barbecue Sauce:
  • 1 2/3 cups ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup prepared mustard
  • 4 teaspoons cider vinegar
  • 1 large garlic clove, minced (3/4 teaspoon)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon liquid smoke
Cooking Directions:
  1. The day before, for sauce, combine ketchup, brown sugar, mustard, vinegar, garlic, onion powder, and liquid smoke. Cover and refrigerate overnight to blend flavors.
  2. For riblets, preheat oven to 275°F. Combine garlic salt, onion powder, and pepper; sprinkle on both sides of riblets. Pour water in the bottom of a 13 x 10 1/2 inch broiler pan. Place riblets in a single layer on rack over the water. Tightly cover with foil. Bake about 1 1/2 hours or until tender. If desired, transfer to covered container and refrigerate precooked riblets overnight.
  3. To grill, preheat gas grill to medium for direct grilling. Grill riblets on a grill screen, uncovered, for 4 to 6 minutes or heated through, turning over halfway through grilling and brushing with sauce. Transfer ribs to cutting board. Cut into serving-size portions; brush with remaining sauce before serving.
