Sweet Baby Corn 'n' Tomato Relish
2 1/2 cups frozen baby yellow and white corn kernels
2/3 cup pear, cherry or grape tomatoes, halved
1/4 cup sliced green onions
2 tablespoons zesty lime vinaigrette salad dressing
1/4 teaspoon ground cumin
Cook corn according to package directions. Transfer corn to a colander; add several ice cubes. Run cold water over corn and ice, gently tossing to cool corn quickly. Remove any remaining ice; drain well.
Transfer corn to a medium bowl. Add tomatoes, onions, vinaigrette and cumin. Toss until evenly coated. Season to taste with salt and pepper; serve with Swift Premium® Dry Rubbed St. Louis Style Ribs with Whiskey Black Pepper Seasoning.
