Pulled Pork Queso Dip
2 cups prepared pulled pork, warmed (see recipes Slow Cooker Pulled Pork and Pressure Cooker Pulled Pork)
1 8 ounce package cream cheese, softened
1/3 cup sour cream
2 cups sharp cheddar cheese, shredded
3/4 cup pico de gallo, fresh
1/4 cup queso fresco or feta cheese, crumbled
2 tablespoons cilantro, chopped
Preheat oven to 425°F.
Mix 1 cup of the prepared pulled pork, cream cheese, sour cream and cheddar. Transfer to a greased 8 x 8" square or 9" round cast iron pan. Top with remaining pulled pork and bake until hot and bubbling, 15-20 minutes.
Top with fresh pico de gallo, queso fresco and cilantro. Serve with tortilla chips.
