Pulled Pork Wrap
2 cups prepared pulled pork, warmed (see recipes Slow Cooker Pulled Pork and Pressure Cooker Pulled Pork)
1 tablespoon balsamic vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon honey
2 tablespoons extra virgin olive oil
1/4 teaspoon salt, coarse ground
1/4 teaspoon black pepper, freshly ground
1 granny smith apple, unpeeled, spiralized or finely julienned
2 cups arugula
1/3 cup feta cheese, crumbled
4 10" tortillas
In a large bowl, whisk together vinegar, mustard and honey. Whisk in oil, salt and pepper. Add the apples, arugula and feta, toss so all ingredients are coated.
Divide the apple mixture between the tortillas and top with warmed pulled pork. Wrap tightly and serve.
