3 1/4 to 3 1/2 hours
1 Swift Premium® Petite Pork Roast
3 slices thick-cut bacon, cut into 1/2 inch pieces
1 cup chopped onion
6 ounces bias-sliced cooked smoked sausage, such as kielbasa, andouille, or chorizo
One 14.5 ounce can whole, peeled tomatoes, slightly crushed
2 tablespoons tomato paste
4 cloves garlic, minced (2 teaspoons)
3/4 teaspoon herbs de Provence
1/4 teaspoon salt
1/4 teaspoon coarse-ground black pepper
Three 15 ounce cans Great Northern beans, drained and rinsed
Baguette slices, toasted (optional)
Pat roast dry with paper towels. Trim and discard outer white and sliver skin membranes from pork. Cut pork into 3/4 inch cubes; set aside.
Cook bacon in large skillet over medium heat until nearly crisp. Using slotted spoon, remove bacon. Reserve drippings.
Brown pork and onion in 2 batches in 2 tablespoons bacon drippings in skillet over medium-high heat. Transfer pork and onions to a 4 to 6 quart electric slow cooker.
Stir in bacon, sausage, undrained tomatoes, tomato paste, garlic, herbs de Provence, salt, and pepper. Cover; slow-cook on LOW for 3 hours.
Stir in beans; cover and continue to slow-cook for 15 to 30 minutes or until the meat is tender. Season to taste with salt and pepper. Serve in bowls with baguette slices, if desired.
