Slow-Cooked Cassoulet

Ingredients:
  • 1 Swift Premium® Petite Pork Roast
  • 3 slices thick-cut bacon, cut into 1/2 inch pieces
  • 1 cup chopped onion
  • 6 ounces bias-sliced cooked smoked sausage, such as kielbasa, andouille, or chorizo
  • One 14.5 ounce can whole, peeled tomatoes, slightly crushed
  • 2 tablespoons tomato paste
  • 4 cloves garlic, minced (2 teaspoons)
  • 3/4 teaspoon herbs de Provence
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarse-ground black pepper
  • Three 15 ounce cans Great Northern beans, drained and rinsed
  • Baguette slices, toasted (optional)
Cooking Directions:
  1. Pat roast dry with paper towels. Trim and discard outer white and sliver skin membranes from pork. Cut pork into 3/4 inch cubes; set aside.
  2. Cook bacon in large skillet over medium heat until nearly crisp. Using slotted spoon, remove bacon. Reserve drippings.
  3. Brown pork and onion in 2 batches in 2 tablespoons bacon drippings in skillet over medium-high heat. Transfer pork and onions to a 4 to 6 quart electric slow cooker.
  4. Stir in bacon, sausage, undrained tomatoes, tomato paste, garlic, herbs de Provence, salt, and pepper. Cover; slow-cook on LOW for 3 hours.
  5. Stir in beans; cover and continue to slow-cook for 15 to 30 minutes or until the meat is tender. Season to taste with salt and pepper. Serve in bowls with baguette slices, if desired.
