Slow-Cooker Pork Tagine
3 1/2 to 3 3/4 hours
One Swift Premium® Petite Pork Roast
2/3 cup chopped onion
2 tablespoons olive oil
1 14.5-ounce can diced tomatoes in sauce
1 tablespoon pumpkin pie spice blend
1 1/2 teaspoons ground cumin
1 teaspoon sugar
1/2 teaspoon garlic salt
1/2 teaspoon ground cinnamon
2/3 cup reduced-sodium chicken broth
1 tablespoon cornstarch
3 cups 3/4-inch-cubed butternut squash
3/4 cup dried apricots, halved
1/2 cup dark or golden raisins
Pat roast dry with paper towels. Trim and discard outer white and sliver skin membrane from pork. Cut pork into 3/4-inch cubes.
Brown pork and onion in 2 batches in hot oil in large skillet over medium-high heat. Transfer pork to a 5- to 6-quart electric slow cooker.
Stir in tomatoes, pumpkin spice, cumin, sugar, garlic salt, and cinnamon. Cover; slow-cook on LOW for 3 hours.
Combine broth and cornstarch; stir into pork mixture. Add squash, apricots, and raisins. Cover and slow-cook for 30 to 45 minutes or until pork and squash are tender.
Serve over cooked couscous.
