Slow-Cooker Pork Tagine

Ingredients:
  • One Swift Premium® Petite Pork Roast
  • 2/3 cup chopped onion
  • 2 tablespoons olive oil
  • 1 14.5-ounce can diced tomatoes in sauce
  • 1 tablespoon pumpkin pie spice blend
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup reduced-sodium chicken broth
  • 1 tablespoon cornstarch
  • 3 cups 3/4-inch-cubed butternut squash
  • 3/4 cup dried apricots, halved
  • 1/2 cup dark or golden raisins
  • Cooked couscous
Cooking Directions:
  1. Pat roast dry with paper towels. Trim and discard outer white and sliver skin membrane from pork. Cut pork into 3/4-inch cubes.
  2. Brown pork and onion in 2 batches in hot oil in large skillet over medium-high heat. Transfer pork to a 5- to 6-quart electric slow cooker.
  3. Stir in tomatoes, pumpkin spice, cumin, sugar, garlic salt, and cinnamon. Cover; slow-cook on LOW for 3 hours.
  4. Combine broth and cornstarch; stir into pork mixture. Add squash, apricots, and raisins. Cover and slow-cook for 30 to 45 minutes or until pork and squash are tender.
  5. Serve over cooked couscous.
